I think in the past when I have wanted to get in shape, drop pounds, etc, I haven't had friends that are willing to go in this with me. This time, I am joining up with at least four other wonderful women for support and encouragement. We all are different ages, live in different states, and most of us haven't met in person. We all just share a love of horses and have gotten to know each other from that interest and a facination with rare colored thoroughbreds.....Already looking forward to this winter/spring and seeing the new babies at Norsire Farms (thank you a bazillion times Bridget for sharing your horses!) and staying up late at night waiting and waiting for a mare to have a baby. Yeah I know, but when you've got a group of great friends you can do anything! Even wait up until 2 or 3 am, or drag yourself out of bed at 4 am to watch a computer screen showing a new life coming into the world.
Anyway, I'm happy to say I've got great people who are willing to keep me on track this time. And my hubby has a month head start on the weight loss so I've got some catching up to do! Here's to Monday morning weigh in and excercise!

Recipe!!! Pear and Granola Muffins
3/4 c. canned pear nectar
2 egg whites
2 tablespoons vegetable oil
1 tablespoon lemon juice
1 teaspoon lemon peel, grated
1 c whole wheat flour
1 c all-purpose flour
2/3 c. brown sugar, packed
1/2 c low-fat granola
1 tablespoon baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/4 c pear, chopped
1. Preheat oven to 350 degrees
2. Whisk together first five ingredients in large bowl to blend
3. Stir both flours and sugar in medium bowl until no sugar lumps remain
4. Mix in granola, baking powder, nutmeg, and salt. Add pear: toss to coat. Stir flour mixture into egg mixture until blended (batter will be thick). Divide among 10 prepared muffin cups.
5. Bake until golden brown and tester into center comes out clean (about 20 minutes). Transfer muffins to rack and cool.

Hello!
So, I've decided to start blogging as an additional motivation for getting in shape. I know sitting at a computer isn't exactly a fitness technique, but saying what I'm doing each day, what I'm eating....it makes me have to try harder. As I try new recipes I'll share them with you. At least the ones I like of course and I'll even let you know what my 2 year old daughter likes. She's a picky eater so if she eats it, it must be good right? I'll also occassionally use recipes that my husband likes, from a different eating plan. Check back often to see what I've been doing. Hope you all enjoy!
